We’ve all been trying to maintain a clean diet but we are also trying to support local businesses and getting take out and delivery to assist the restaurants.  It’s a tight rope that we are trying to manage with balance on both sides.  Try to eat clean vs support the small businesses.  Can we do both?  Maybe.  I am all for supporting the small businesses we have here.  Panzanelli’s has some KILLER bread sticks and the Spud Bus has some tasty items, too.  But we can’t eat like that very often and expect to make our health goals.  What to do?  Look for some healthier options on their menu.  Do they have a chef salad, grilled chicken, lettuce wrap option, soup, stir fry (without the rice or noodles) or a healthy choice option on the menu?  Look for some of these or ask if they provide something.  Maybe go with the bunless burger, apple slices or broccoli instead of fries and still support the local guy.  You can come up with some creative ideas that they may not have thought of and start a whole new thing.  Scrambled eggs and avocado perhaps?  Keep an open mind but know you can’t do it every meal and you can have a little indulgence once a week while still helping the community with regular clean meals, too.  Got any ideas that I missed?  Send them to me and I will start compiling the cheat sheet to a healthier you.

Roasted Tomatoes Tuna and Zoodles

Ingredients

  • 1 cup halved cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 2 zucchini cut into noodles
  • 2 cans tuna drained and flaked
  • Juice of 1 lemon
  • 2 tablespoons fresh chopped basil
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Preheat oven to 400 degrees F.
  2. Lay the tomatoes on a baking sheet and drizzle with the oil. Sprinkle with thyme and roast for 8-10 minutes, until tomatoes are shriveled and sizzling. Remove from oven and let cool.
  3. Toss the noodles, tuna, lemon juice, basil, and tomatoes in a large bowl until combined. Season with salt and pepper and serve.
