I ran across some memory pictures on Facebook this week and about 3 years ago this last week we were all playing hooky from work sitting out in the field with lawn chairs and drinks and our special glasses so we could watch the ECLIPSE.  I never thought much about it before and figured it was just about as exciting as the photos in books get but going through it and seeing the final view when the sun is fully covered was as impressive a demonstration as I can remember.  That kind of phenomenon doesn’t come around very often……And here we sit in 2020 with the Corona Virus bringing the world to it’s knees.  I have to say these first 6 months of it have seemed to turn the world upside down.  Emotions, frustrations, anger, fear and polarity have now become the norm in our worlds.  We all need to step back from the arena and try to catch our breaths.  I know our politicians from top to bottom are trying, and all different factions of people have their ideas on the best route to take but let’s pull away from this and find some time for ourselves.

Start taking just 10 minutes every day and do a breathing exercise and meditate a little to clear our heads, hearts and soul.  You don’t have to “Ohm” but just breath in for 5 seconds, hesitate, breath out for 5 seconds and hesitate again.  Try to focus on your breathing and the count and nothing else.  Your mind will wander but just bring it back to the breathing and counting.  Set a clock for 10 minutes and make an appointment to do this every day.  Don’t expect to be the Dali Llama the first day, week or year.  Just practice being able to sit and relax for 10 minutes, no music/tv or computers etc.  You and the clock and the breathing.  Let me know how you feel when you are done.

Root Vegetable Omelet

This easy to prepare omelet is loaded with root veggies, for fiber and antioxidants. The secret to quick cooking is grating them on a box grater — they’ll cook quickly and brown up so they are nice and sweet. Use any combination of veggies you want, as you can’t go wrong here.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup grated root vegetables such as beets, turnips, or parsnips
  • 3 eggs beaten
  • 1 ounce goat cheese crumbled
  • 1 tablespoon fresh chopped parsley
  • Sea salt and fresh ground pepper to taste

Instructions

  1. In a non-stick skillet, heat the oil over medium heat. Add the root veggies and cook until softened and lightly caramelized. Season with salt and pepper and add the eggs. Cook for a minute until the edges are set. Lift the edges carefully and let the liquid flow underneath the edges. When eggs are cooked, top with the goat cheese crumbles. Cover until warmed through and serve.
