2 weeks ago we talked about what to do to help out with the people up the canyon who need help.  I’ve decided to open a donation jar in the gym and give it to the Santiam Canyon Wildfire Relief Fund through Santiam Hospital.  Anything you can give for the next 2 weeks, I will collect and donate to the Hospital in the gym’s name.  Whether you want to write a check, donate cash, purchase a gift card, etc.  I think they can use money to buy what they need rather than us trying to guess to buy toothpaste or cat litter.  Please give what you can, we all know someone who have had a loss in the fire.  Thanks ahead of time.  I will plan to take it in October 9th so you have 2 weeks to make a donation.

We have FIRST FRIDAY FUN coming up this week, Oct 2 at Snow Peak Brewing at 6:30 pm.  Family, friends, fun, foodology and lies about WOD times.

That also means we have first of the month Weigh & Measure this week.  Let’s check your progress and keep moving forward with your plans.

Greek Omelet

Salty olives and sundried tomatoes takes the omelet a long way when it comes to flavor and nutrition. This is the perfect breakfast when you’re short on time but still need a healthy breakfast.

Ingredients

  • 1 tablespoon olive oil
  • 3 eggs beaten
  • 1/4 cup diced cucumber
  • 1/4 cup diced red onion
  • 2 tablespoons sliced sundried tomatoes
  • 4-5 kalamata olives pitted and sliced
  • 1/4 teaspoon dried oregano
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the oil in a small skillet over medium low heat. Add the eggs and cook for a minute until the edges are set. Lift the edges carefully and let the liquid flow underneath the edges.
  2. When the eggs are cooked, add the remaining ingredients and fold in half. Heat through and serve.
