What is everyone thankful for?  So far this year we have made it through fire, plagues, riots, CrossFit scandal, an election, shut downs twice, businesses struggling and schools/parents/kids trying figure out Zoom.  I’d say you have all done a great job getting through it.  Give yourself some credit for not giving up and forging ahead.  Sure there were times we all didn’t think we’d ever get through but we did and I think we did a pretty good job supporting each other.  I know I have been on the receiving end quite a bit lately and I do appreciate all your help and support.  And better late then never, a BIG shout out “Thank You!” to Scott Vigil for helping me out getting leaves raked up last week.  That was really nice of you.

What are you thankful for this year?  After all that’s gone on we can really get a good perspective on how much we take for granted.  I still have to remember I can’t just run to any restaurant for lunch, they are either closed or only have “to go” food.  I still walk clear up to the door at Roth’s before remembering to put on a mask and have to walk “all the way back to the car”, a sum of maybe 100 feet.  But we are all doing our part to help so be thankful everyone else is doing theirs.  How about all the essential workers, medical, law enforcement, fire and on and on who are still working to help us all.  There are lots of volunteers who have helped out with the WildFire effort for the last couple months, let’s be thankful our community supports each other in times of need.  There are a lot of others I haven’t listed but know that you are all appreciated in what you do to help others in the community.  So be thankful for what we have this year and keep a helping hand out to those who need it.

Schedule= The gym is still closed this week.  December 2 is the estimated first day open unless the Governor extends the shutdown.  Keep a good thought for us to re -open for December.

Curried Carrot Fries

These make a delicious addition to bunless burgers, Paleo wraps, or just as a quick and easy snack when you’re craving unhealthy fries.

Ingredients

  • 4 large carrots
  • 1 teaspoon curry powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon coconut oil melted
  • Chopped cilantro

Instructions

  1. Preheat oven to 425 degrees Line a baking sheet with parchment paper.
  2. Peel and cut the carrots into sticks about 3 inches long and 1/4 inch thick. Toss with the curry powder, salt, and oil.
  3. Lay on the baking sheet in an even layer. Bake for 20-25 minutes, until carrots are crisp and lightly browned. Remove and sprinkle with the cilantro.
  4. Serve immediately.
