Yes, it’s time to sign up for the CrossFit Open again.  For $20 you can be part of the biggest fitness event in the world with upwards of 3-400,000 participants.  Not to worry, it’s only going to be 3 workouts, 1 each week for 3 weeks instead of the 5-6 weeks that has been the norm.  There are all kinds of categories to participate in, masters, novice, home gym, etc.  I am guessing we will be in the home gym category this year but I am just guessing.  This will start March 11 so there is plenty of time to sign up and keep training to be ready for it.  They may even bring back the 7 minutes of max burpees, just cause you love it so much!

My update- I am coming up on the halfway point on my chemotherapy treatment this Friday and will start my 4th cycle of treatment, 9 more weeks.  I have a CT scan scheduled this week and meet with the oncologist for a progress report.  I am very happy with my progress, I am able to move freely, walk, squat and even put socks on while standing up.  I could barely climb in and out of the car when the treatment started.  I still have fatigue but chalk that up to the chemo doing it’s thing on the tumor.  Just for reference it was about the size of a ream of paper within my abdomen so I can tell it has shrunk.  Now I will just finish the second half strong and see if I can kill it all.

I haven’t heard any news about opening the gym/restaurants etc and it sounds like the COVID cases are still climbing.  This will prevent us from joining up at the gym for a while longer.  I still am offering Home Workout plans if you want to join in, keep moving and try to keep that COVID Locked In weight from creeping up on you.  We’ve seen a lot of fun scores posted each day and there is plenty of options to sub in moves if you need it.  Let me know if you are interested.  Call today 503-510-4656

Schedule for the week- GYM is still closed but I have a birthday Tuesday- 59- so Filthy 50 works out to anything over 50 divided by 2, 59/2=29.5 and call it 29.  So Filthy 29 on Tuesday if you have the means or want to sub in some movements.

Tuna Cakes with Lemon Parsley Slaw

Ingredients

Lemon Parsley Slaw:

  • 2 tablespoons olive oil based mayonnaise
  • Juice and zest of 1/2 lemon
  • 1 clove garlic minced
  • 2 tablespoons finely chopped parsley
  • 2 cups finely shredded cabbage
  • Sea salt and fresh ground pepper to taste

Tuna Cakes:

  • 2 5- ounce cans tuna drained
  • 4 green onions sliced
  • 1 clove garlic minced
  • Juice and zest of 1/2 lemon
  • 1/2 cup almond flour
  • 1/2 teaspoon sea salt
  • 2 eggs
  • 2 tablespoons olive oil

Instructions

  1. Make the slaw by whisking the mayo, lemon, and garlic in a large bowl. Add the cabbage and parsley, season with salt and pepper. Stir and set aside.
  2. To make the tuna cakes, mix the tuna, green onions, garlic, lemon, almond flour, salt and eggs in a large bowl. Mix well and form into 4 patties.
  3. Heat a skillet over medium high heat and add the oil. Fry the tuna cakes until browned on both sides.
  4. Serve over the slaw.
