I’m still getting over the COVID so I will just get the basics out today.

 

Schedule for the week- Monday-Friday 5 am and 6 am, 4:30 pm, 5:30 pm.  Saturday at 8 am.  There is still a chance of cancelling classes but I think I will be back in the gym by Wednesday.

WORKOUTS- squats/ring dips, Partner up to ROW, Pistols/thrusters/snatch, ANNIE, Press/muscle ups, POKER on Saturday

Breakfast Stir-Fry

This easy to make breakfast is a different take on the usual omelet or pancakes. It’s full of fiber and protein, and is sure to keep you full all day long.

Ingredients

  • 2 cups riced cauliflower
  • 2 tablespoons sesame oil
  • 2 green onions sliced
  • 1 clove garlic minced
  • 1 teaspoon grated ginger
  • 2 cups chopped bok choy or cabbage
  • 1 cup sliced carrots
  • 4 eggs
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Steam the cauliflower in the microwave until tender. Add a pinch of salt and pepper. Divide between two plates.
  2. In a large skillet, heat the oil and add the green onions, garlic, and ginger. Cook for a minute and add the bok choy and carrots. Stir and cook until veggies are crisp tender. Remove and add to the cauliflower.
  3. Crack the eggs into the pan and cook until done to your liking. Add to the veggies and serve.
