Looks like the afternoon classes get a break this week, only in the 80’s.  You might want to break out the sweatshirts and gloves.  LOL.  I will be gone Monday and Tuesday and possible Wednesday, too.  Chelsea and Heidi will cover the classes while I am gone.  Watch for emails/text/Facebook posts if they need to cancel a class they will give you as much notice as they can.  Sometimes there is no notice at all so if you get to the gym and it’s closed please be patient as we work through this.  Thanks in advance.  If you really need a workout when you get here, there is either 7 minutes max burpees or 400m of lunges(12 min cap), both easily done without having to get into the gym at all.

Heidi is coming up on her Hood To Coast run so be sure to encourage her.  She’s been working hard for this all summer.  Check out Northwest Fitness Games, nwfitgames.com.  They have a couple competitions coming up in November and December.  November=3 person team, December= 2 person teams.  These are great fun and have scaled categories and masters divisions.  Ask Heidi, Chelsea, Josh or myself for more information.  These are set up for average people to compete at.

THIS WEEK’S PALEO RECIPE

Quick and Easy Marinara

If you don’t want to stand over the stove all day, but still want a homemade sauce, this is for you. Perfect for zucchini noodles, meatballs, or anywhere else you want a delicious marinara sauce.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 28- ounce cans whole peeled tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon balsamic vinegar

Instructions

  1. Heat the oil in a large heavy pot. Add the onion and garlic and cook until soft. Add the tomatoes and Italian seasoning and bring to a boil. Reduce and simmer for 45-55 minutes until tomatoes are broken down.
  2. Add the vinegar and puree the sauce if you want a smooth sauce; otherwise serve as is.
  3. Store leftovers in an airtight container in the fridge.
