Feels like spring is finally here and Easter shows up but we are still in lock down, no big family get togethers, no community egg hunts, no travel plans and some are not working while others are being overloaded.  A tough time to try to be upbeat but we can still find ways to stay positive.  As far as I know all of you have missed catching the virus so we have that going for us.  Kids are still able to get some education over the internet-  a good use for it.  Some have extra time and are able to catch up on projects/cleaning/sorting/organizing that we never had time to get around to.  When this is all done I am afraid to see how over run Goodwill is going to be.  I know I have a pile to drop off to them.  Keep yourself busy and limit the Netflix binge temptations.

So we continue with our Home WODs into our 4th week.  If anyone wants to join in just let me know and we will get you set up to join us.  As the weather improves we can also start adding some outdoor activities beyond the WODs. Think about walks, hikes, bikes and the like.  Maybe some yard work or have a “virtual” block party with the neighbors but just stay in your own yard.  I saw one guy was doing his DJ music for the whole block and this last week Russ Strohmeyer got his Music Van out and drove around the neighborhoods with a mini parade for everyone.  Thanks, Russ.  I suspect when we get released there are going to be some long awaited get togethers.  In the meantime keep after those workouts, keep eating clean, get lots of rest and observe the 6′ rule.  Be sure not to stock up on the unhealthy snacks, it really helps if you don’t have them in the house.  Well may a Cadbury egg today but don’t let it get out of hand.

Guacamole Deviled Eggs

Deviled eggs get a redo with creamy avocado and fresh salsa. Make up a batch and then grab a couple when you need a quick snack.

Ingredients

  • 6 hardboiled eggs
  • 1 avocado pitted and peeled
  • 1 clove garlic minced
  • 1/2 small tomato diced
  • 1 tablespoon minced jalapeno
  • 2 tablespoons red onion diced
  • 2 tablespoons chopped cilantro
  • Juice of 1 lime
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Peel the hardboiled eggs and remove the yolks. Add them to a bowl with the avocado and mash.
  2. Add the remaining ingredients and mix well.
  3. Spoon the mixture into the egg white halves. If saving for later, put the guacamole mixture in an airtight container and spoon into the eggs when ready to eat.
