Happy Mother’s Day and enjoy this great day.

Looks like things are going to change soon.  The Governor is starting Phase One this Friday, May 15 and gyms are included in the reopening.  I am still in a holding pattern because this is going to be a county by county approval plan.  I don’t know how close Marion County is to having all the necessary resources to get approval.  I will keep you updated by email as things progress and if you hear anything please contact me.

I also need some help sourcing things like hand sanitizer and Chlorox sanitizing wipes.  If you have any good sources please share them with me or if you see some on the shelf, buy one or two and I will reimburse you.  Don’t hoard them, just a regular size purchase please.  I am not sure to what level we will be required to distance ourselves in the gym and other requirements such as temperature checks, signing in, hand washing, etc.   I will be looking for that information also.

Keep working on that nutrition plan, especially if you are working from home.  Keep the menu to the basics and try to keep the junk food out of the house.  Your menu should look like:  lean meats, nuts and seeds, vegetables, some fruit, little starch and NO SUGAR.  Drink plenty of water, get plenty of rest and eat at levels to maintain your body but not gain fat.

Chocolate Coconut Fudge

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup creamy almond butter
  • 1/2 cup cocoa powder
  • 1/4 cup honey
  • Coarse sea salt

Instructions

  1. Line a square baking dish with parchment paper.
  2. Combine all of the ingredients in a small saucepan over low heat and whisk until smooth.
  3. Pour the mixture into the prepared baking dish and refrigerate for at least 2 hours.
  4. Cut into squares and serve. Store leftovers in the fridge or freezer.
