As far as I can tell, I don’t see the gym opening up this month.  Other states have started to edge into going back out and we will continue to watch and see how their efforts work.  The last list I saw for Oregon had gym facilities in the 3rd phase of opening and they expected each phase to take 2-4 weeks to monitor exposure levels to the virus.  Without any issues of another spike in numbers that would put us opening in 4- 8 weeks from the start of phasing back in.  So continue to be safe and stay home as necessary.  For the front line workers, thanks for all you are doing and we all hope you are able to stay safe too.  I believe most of us are either working AT work or working from home.  At our house we are starting to see signs of “cabin fever” so if you are getting that, too, then get out, take a walk, go for a drive but do something to break it up.  This week will be the start of some nicer weather so take advantage of it.

If you are some of those who have been laid off or are not working let me know and I will waive any fees to join the Private Facebook Group for At Home Workouts.  If anyone else is ready to join in and keep yourself active while we are in lockdown, let me know and we will get you signed up, too.  Most of the workouts are less then 1/2 hour total so you can fit them into your schedule and break up the day. Next week is Mother’s Day so you better get ready.  Gift cards to her favorite restaurant really aren’t a good choice this year so try to be creative.

Lamb and Root Vegetable Stew

Hearty and full of chunky vegetables, this stew is rich with flavor, full of good fat and antioxidants, and most importantly delicious. Perfect for a cold winter night when you want something comforting, but without refined carbs.

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds lamb shoulder cubed
  • 1 onion diced
  • 2 carrots diced
  • 2 turnips peeled and cubed
  • 2 parsnips peeled and cubed
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 2 tablespoons tomato paste
  • 6 cups chicken or beef broth
  • 2 bay leaves
  • 1 tablespoon apple cider vinegar
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the olive oil in a heavy pot or Dutch oven. Season the lamb with salt and pepper and add it to the pot. Cook until well browned and remove from pot. Set aside.
  2. Add the veggies to the pot and cook until softened. Stir in the garlic and seasonings and continue cooking for another minute. Add the tomato paste, stir, and add the lamb back to the pot.
  3. Add the broth and bay leaves, and bring to a boil. Reduce to a simmer and simmer on medium low heat for an hour, or until lamb is tender. Add the apple cider vinegar and remove the bay leaves.
  4. Serve immediately.
