Yes technology is wonderful til some dip stick hacks your contact list and you have to notify everyone in your universe that you may get sucked into the vortex of annoyance and apologize ahead of time for any inconvenience.  So yes that’s what my Saturday is turning into.  I should be out enjoying the day and I hope you are.  I hope your day started off great with a Poker WOD or a half marathon walk or your favorite breakfast at your best restaurant with your favorite person.  Okay, I am bringing my mindset back around to better things.  Yes, we were going to discuss mindset this week.  There is a book called Mindset by Carol Dweck that has done research on growth mindset vs fixed mindset.  It addresses how we see our talents and abilities.  Those that see yourself as having a finite set of talents and abilities do okay but may not excel.  Those that see our talents and abilities as being able to be developed have a higher chance of success.  How we parent, do business and play sports are influenced by our mindset and can affect others on how they perceive themselves.  If you limit yourself to the tools, talents and abilities, you currently have you will limit your chance of success. If you believe you can develop, learn and expand on this tool box then you have a much better chance of success.  It’s okay to see your limits at the time but believing you can expand on it, grow it and improve on it is a huge bonus to help you.  I’d recommend reading it and if you need a copy you can borrow mine.  So yes there is hope to learning those double unders.  See you at the gym.

Tuna Cakes with Lemon Parsley Slaw

Turn a can of tuna into an easy and nutritious meal with this easy recipe. It’s perfect for a quick lunch or dinner, and makes a filling meal you can count on.

Ingredients

Lemon Parsley Slaw:

  • 2 tablespoons olive oil based mayonnaise
  • Juice and zest of 1/2 lemon
  • 1 clove garlic minced
  • 2 tablespoons finely chopped parsley
  • 2 cups finely shredded cabbage
  • Sea salt and fresh ground pepper to taste

Tuna Cakes:

  • 2 5- ounce cans tuna drained
  • 4 green onions sliced
  • 1 clove garlic minced
  • Juice and zest of 1/2 lemon
  • 1/2 cup almond flour
  • 1/2 teaspoon sea salt
  • 2 eggs
  • 2 tablespoons olive oil

Instructions

  1. Make the slaw by whisking the mayo, lemon, and garlic in a large bowl. Add the cabbage and parsley, season with salt and pepper. Stir and set aside.
  2. To make the tuna cakes, mix the tuna, green onions, garlic, lemon, almond flour, salt and eggs in a large bowl. Mix well and form into 4 patties.
  3. Heat a skillet over medium high heat and add the oil. Fry the tuna cakes until browned on both sides.
  4. Serve over the slaw.
