I have my annual visit with my doctor this coming week.  I haven’t seen him in about 2 years so “annual visit” is a stretch.  The main reason I haven’t seen him is because I have spent so much time with my Oncologist for the last 2 years there wasn’t much need to check in with my regular doctor. (When you have a tumor the size of a ream of paper in your abdomen you get new priorities laid out for you.)  But all is good now.  And of course there was that “COVID” thing going on for 2 years which made seeing anyone face to face an extra challenge.  So when I see my doctor this week I plan to have a few tests done to see where I am on a few points.  I will have the cholesterol/triglycerides panel done to see if my HDL (healthy) is getting higher and if my LDL (lethal) is getting lower.  I haven’t had an issue with this and was making good progress with it before which I wholly attribute to hitting the WODs hard.  Of course my blood pressure and heart rate have been monitored regularly the last 2 years so I’m fine there, last week was 96/61 and HR at 51. Just chilling.  Next I will have him check my A1C blood sugar levels to see how my last 3 months of eating have been going.  Overall I should do okay but Easter left some stray chocolate around to I will take a little hit there.  (Note to self- toss the rest of the chocolate).  I will probably ask for some Vitamin D, testosterone, Iron and Magnesium panels done just to see how I am doing for supplements.  So where am I going with this?  It’s time for all of us to get back to the doctor and get those basic metrics checked and see how we are doing.  It’s also a good evaluation of how well your nutrition and exercise program are doing too. Getting regular check ups is an excellent way to maintain good health and a fantastic way to catch things early that need attention.  I regret not having been in sooner for my tumor issues so don’t put things off.  Set up your appointments this week, work on good nutrition and keep hitting the gym hard.  It all pays off, short term and long term and we want to see you around for a while!

Breakfast Noodle Bowl

Zucchini noodles are paired with eggs and flavorful broth for a different kind of breakfast that will soon become a favorite.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 2 zucchini cut into noodles
  • 1/2 cup homemade chicken broth
  • 4 eggs
  • 1 teaspoon vinegar
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat and add the onion, garlic, and ginger. Cook until softened and add the zucchini noodles. Stir and cook for about 2 minutes and add the broth.
  2. Before serving, crack the eggs in a small bowl one at a time. Bring a pan of water to a simmer and add the vinegar. Carefully add the eggs and turn off the heat. Cook for 4 minutes. Remove with a slotted spoon and serve on top of the vegetables.
