We make fun of “preppers” all the time and even have some TV shows to highlight the extremes that we can go to in the name of preparation.  Granted I don’t have a bunker, 500 gallons of water, 300 lb of rice or a vault full of guns (or maybe I do) but I try to be ready for the things that may or may not kill me.  I think most of us have seen the video of the guy walking a logging road and runs across the cougar and her 2 kits.  For the most part he did well not “showing” panic but you could hear it in his voice.  He stayed focused and didn’t turn and run which most likely would have been his last mistake.  He just kept trying to scare the cougar off, yell at it and keep retreating while still facing the cat.  (I think I would have ditched the phone right away but that’s just me.) He finally grabbed a rock, threw it at her and she ran off.  After 6 minutes it was a rush of adrenaline for him and the viewers.  Was he prepared?  Not too bad I’d say.  Now were any of us prepared for CORONA?  Maybe not for the lock down, cabin fever, home schooling and mask issues but those of you going to the gym and maintaining your overall health?  You were and have been prepping for this ever since you walked into the gym.  The best way to fight the virus is to maintain a maximum amount of health that you can manage.  It may not be Olympic standards but eating clean, working out 4-5 times a day, getting plenty of sleep, reducing stress, drinking water and others puts you in the 99%+ category ready to walk through having COVID 19.  So you are a prepper and didn’t even know it!  Well, done!  If you need help digging that bunker, there are a bunch of people in the gym who would be a lot of help with that type of work.

Keep some running shoes in your car, you never know when the 5K run will be scheduled.

Coconut Shrimp with Mango Slaw

A sweet and savory salad is served with crispy coconut shrimp for a meal that is nutritious, filling, and satisfying.

Ingredients

  • 2 cups finely shredded cabbage
  • 1 jalapeno minced
  • 1 mango diced
  • 1/2 cup chopped cilantro
  • Juice of 1 lime
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 pound peeled and deveined shrimp
  • 1 egg

Instructions

  1. Preheat oven to 400 degrees F.
  2. Combine the cabbage, jalapeno, mango cilantro, and lime juice in a large bowl and toss. Set aside.
  3. In a wide, shallow dish, combine the coconut, almond flour, garlic, and cayenne. In a separate bowl, beat the egg.
  4. Dip the shrimp in the egg, followed by the coconut mixture. Lay the shrimp on a parchment lined baking sheet.
  5. Bake for 8-10 minutes, until the shrimp is golden brown and cook through.
  6. Serve with the slaw.
