We’ve had some busy weeks recently and it’s time to get back to some day to day business and get our routines solidified.  Get you to the gym on a regular schedule, dial in that nutrition plan, get some great 7-8 hours of sleep every night and enjoy the good weather coming this week.  Let’s start off the week on a high note and see everyone at the gym.

Lemon Herb Grilled Chicken

A quick lemon herb sauce turns chicken breasts into a masterpiece. Delicious for an outdoor meal or sliced on top of a salad.

Ingredients

  • 1/4 cup olive oil
  • 1 bunch parsley
  • 5 green onions
  • 4 basil leaves
  • 2 cloves garlic
  • 1 teaspoon salt
  • Juice and zest of 1 lemon
  • 4 chicken breasts

Instructions

  1. Put everything but the chicken in a blender and blend until smooth. Marinate the chicken for 2-4 hours.
  2. When ready to grill, preheat gas or charcoal grill to medium high heat. Grill chicken until internal temperature reaches 165 degrees.
  3. Let chicken rest for 5 minutes before serving.
