Happy Father’s Day to all the Dads out there.  Have some steak eggs and bacon for breakfast and enjoy your day.

The new sweatshirts are in so I will be handing them out this coming week.  They looked great on everyone at the BBQ Saturday.  I want to thank Jenn and George for hosting all of us at their beautiful home in “Lyons”.  All of the food was delicious too, so thanks to all the cooks!

ICYMI- In Case You Missed It.  My cancer has returned and I am now moving forward with a new treatment.  I recently had a biopsy done to confirm it’s the same cancer and had my T-cells harvested Wednesday.  They will take the T-cells, which are a kind of white blood cell, genetically modify them so they are programmed to attack the cancer cells then reintroduce them to me 3-4 weeks from now.  That will be about the middle of July.  The tumor is still located in my lower right abdomen, approximately the size of “3 scoops of ice cream” according to my doctor.

In the meantime I will be getting 5 days or radiation treatment starting this Wednesday June 22.  I have a fast growing cancer so they want to slow it down or stop it from getting any bigger.  We will see how I manage with the radiation and its effects.

In July when the T-cells are ready I believe I will go through another major round of chemo therapy to knock out my immunity system to give the T-cells priority in my body.  I will be isolated for at least 1 month and it could be up to 2.  I will be working with Heidi and Chelsea to try to keep the gym open as much as we can but don’t expect the full schedule.  I will keep you informed of our plans as the dates near.

Shrimp and Veggie Chowder

An easy and healthy soup that is creamy and delicious. Full of protein and fiber, it will become a regular on your dinner table.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound shrimp chopped
  • 1 onion diced
  • 2 stalks celery diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 zucchini diced
  • 1 tablespoon Old Bay seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream or coconut milk
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Heat the oil in a large pot. Add the shrimp and cook until pink. Remove from pot.
  2. Add the veggies and Old Bay and cook until softened and lightly browned. Add the broth and cream and bring to a low simmer.
  3. Simmer for 10-15 minutes, and add the shrimp back to the pot. Heat through and serve.
